Title: Ultra-processed Foods are Under Fire: A Case for Nutrient Dense Foods

Overview: One of the hottest and most controversial topics in diet and health today is Ultra-processed Foods. There is considerable attention being given to the role of food processing in nutrition, health, and weight management by the media, food policy makers, and researchers. Join us for a discussion on the how and whys of food processing and the nutritional contribution of processed foods. A case will be made for nutrient density determined by food formulation more than the extent of processing on evaluating foods and diets.

Dr. Weaver is a Distinguished Research Professor in Exercise and Nutritional Sciences at San Diego State University, San Diego, CA and Distinguished Professor Emerita of Foods and Nutrition at Purdue University, Indiana where she taught food chemistry and nutrition courses and was department head for 25 years. Dr. Weaver is an elected member of The National Academy of Medicine and a fellow of the American Society for Nutrition, the Institute of Food Technologists, the American Heart Association, and the American Society of Bone and Mineral Research. She is a member of the Science Advisory Boards of FDA, the California Prune Board, the California Walnut Board, and Arkansas Children’s Nutrition Center. Dr. Weaver is past president of American Society for Nutrition.

Registration costs will include drinks and heavy appetizers.
